For "Chicken Chilindron," cut the bell pepper, canned tomatoes, onion, chicken thighs, and jamón or ham into portion-sized pieces.
Fry the chicken thighs and jamón or ham until lightly golden.
Add the onion and cook for 3–5 minutes.
Pour in the olive oil and add the remaining ingredients.
Braise over low heat until tender and the sauce has thickened.
Adjust salt and pepper, and serve hot.
