Soak the peas overnight and rinse them.

Cover the pork, peas, onion and carrot with broth or water.

Bring to a boil, skim off the foam and cook for 1.5–2 hours.

Once the peas have softened, remove the pork, slice it and return it to the soup.

Season with salt and pepper and heat for another 5 minutes.
