Rinse the prepared tripe thoroughly, cover with water and boil for 10 minutes, then drain the water.

Cover the tripe with broth and cook for 1–1.5 hours until tender.

Cut the carrots, celery and onion into strips and add to the soup.

Season with marjoram, ginger, nutmeg, paprika, salt and pepper.

For thickness, make a light roux from butter and flour, stir it into the soup and cook for 5 minutes.

Serve very hot with bread and fresh parsley.
