  • cipolla2 pz
  • sedano2 gambi
  • brodo di manzo800 ml
  • farina200 g
  • lardo o burro80 g
  • sale1 a piacere

Cut the beef into cubes, coat with some of the flour and fry.

Add the onion, carrot, celery and stock.

Simmer covered for 1.5–2 hours until tender.

For the dumplings, mix flour, suet or butter, salt and a little water.

Shape into balls and place on top of the stew.

Cook for a further 20 minutes with the lid on, without lifting it.
