Preheat the oven to 200 °C and dust a baking tray with flour.

In a bowl, mix together the flour, baking soda, salt, and a little sugar if desired.

Pour in the buttermilk or kefir and quickly stir just until a soft dough forms — do not knead for long.

Shape into a round loaf, place on the baking tray, and cut a deep cross-shaped score across the top.

Bake for 35–40 minutes, until the bread is well browned and sounds hollow when tapped on the bottom.

Cool on a wire rack and serve with butter, soup, or stew.
