For "Carbonade Flamande", cut the onions, beef and beef stock into portions.

Fry the beef and beef stock until lightly browned.

Add the onions and cook for 3–5 minutes.

Pour in the butter and add the dark beer, mustard and thyme.

Braise over low heat until tender and the sauce is thick.

Adjust salt and pepper, serve hot.
