  • patata800 g
  • olio d'oliva4 cucchiaio
  • salsa di pomodoro200 g
  • paprica affumicata1 cucchiaino
  • aglio2 spicchi
  • maionese o aioli120 g
  • sale1 a piacere
  • zucchero1 cucchiaino
  • limone1 pz
  • concentrato di pomodoro2 cucchiaio
  • acqua500 ml

Cut the potatoes into large cubes and boil in salted water for 5–7 minutes until half-cooked.

Dry the potatoes, mix with olive oil, and bake or fry until crispy.

For the sauce, fry the garlic, then add tomato paste or crushed tomatoes, smoked paprika, and a little chili.

Simmer the sauce for 8–10 minutes, season with salt, and add a pinch of sugar if needed.

If desired, prepare aioli from mayonnaise, garlic, and lemon juice.

Pour the tomato sauce over the hot potatoes and serve with aioli on the side or on top.
