Kharcho with Beef
A hearty Georgian soup with beef, rice, tkemali, walnuts, and spices.

Istruzioni
Cover the beef with 2.5 l of water, bring to a boil, skim the foam, and cook for 1–1.5 hours.
Remove the meat, cut it into pieces, and strain the broth.
Sauté the onion with tomato paste, then add to the broth together with the rinsed rice.
After 15 minutes, add the meat, tkemali, crushed walnuts, garlic, and khmeli-suneli.
Cook for another 10–15 minutes until the rice is tender and the flavour is rich.
Season with salt, add coriander, cover with a lid, and let it rest for 10 minutes.
