Lithuanian Chlodnik
A cold Polish beet soup with kefir, cucumber, and herbs
Ingredienti
- barbabietola3 pz
- kefir700 ml
- panna acida150 g
- cetriolo1 pz
- ravanello6 pz
- uovo4 pz
- aneto20 g
- cipollotto20 g
- sale1 a piacere
- pepe nero1 a piacere
- limone1 pz
Istruzioni
Boil or roast the beets until tender, let cool, and grate.
Dice the cucumber and radish into small cubes or julienne strips.
Mix together the kefir, sour cream, beets, cucumber, radish, and herbs.
Add lemon juice, salt, and pepper, and adjust the acidity to taste.
Chill the soup for at least 1 hour.
Serve with half a hard-boiled egg and dill.
