Traditional aspic made from pork trotters — a festive dish
Ingredienti

- coscia di pollo1 pz
- cipolla1 pz
- carota1 pz
- aglio5 spicchi
- foglia di alloro3 pz
- pepe in grani10 pz
- rafano grattugiato50 g
Istruzioni
Soak the pork trotters for 2 hours, scrape them clean; cover with fresh water and discard the first broth.
Cook for 4–5 hours on minimum heat. Add onion, carrot, bay leaf, and peppercorns.
After 3 hours, add a chicken thigh for a more delicate flavour.
Separate the meat from the bones and chop finely. Strain the broth.
Arrange the meat with garlic greens in a mould and pour the broth over it.
Refrigerate for 6+ hours. Serve with grated horseradish.
