For "Cypriot Bulgur Pilaf", cut the onion, bulgur and tomato paste into portions.

Fry the onion until lightly golden.

Add the onion and cook for 3–5 minutes.

Pour in the olive oil and broth or water and add the vermicelli.

Simmer over low heat until soft and the sauce has thickened.
