Cossack millet soup with lard, potatoes, and onion
Ingredienti

- lardo120 g
- patata3 pz
- cipolla1 pz
- carota1 pz
- acqua o brodo1200 ml
- erbe fresche20 g

- pepe nero1 a piacere
Istruzioni
Rinse the millet several times until the water runs clear, to remove any bitterness.
Cut the lard into cubes and render it in a cauldron or heavy-bottomed pot until cracklings form.
Add the chopped onion and carrot and sauté for 5 minutes until softened.
Pour in water or broth, add the diced potatoes, and cook for 10 minutes.
Stir in the millet, season with salt and pepper, and cook for 18–20 minutes until the grain is tender.
Add fresh herbs, cover, and let the kulish rest for 10 minutes.
