- paprica2 cucchiaino

Soak the white beans overnight, then boil until completely soft.

Drain the water, reserving a little of the cooking liquid to adjust the consistency.

Add garlic, salt and some of the oil, then blend the beans into a smooth purée.

Slice the onion into half-rings and fry in oil until golden.

Add paprika to the onion and stir quickly.

Spoon the purée onto a plate and top with the onion and paprika.
