Cabbage rolls with meat and rice in a lemon sauce.
Ingredients
- White cabbage600 g
- Pork and beef mince500 g
- Rice250 g
- Onion1 pcs
- Eggs2 pcs
- Lemon1 pcs
- Chicken broth900 ml
- Salt1 to taste
- Black pepper1 to taste
- Dill15 g
- Fresh mint10 g
- Olive oil2 tbsp
Instructions
Blanch the cabbage leaves until soft and trim the thick ribs.
Mix the mince with rinsed rice, finely chopped onion, dill, mint, salt, and black pepper.
Wrap the filling in the cabbage leaves into small tight rolls.
Place the rolls seam-side down in a pot, pour in chicken broth, and add a little olive oil.
Simmer covered for 45–60 minutes until the cabbage, rice, and meat are fully cooked.
Whisk the eggs with lemon juice, temper with a few spoonfuls of hot broth, then pour the avgolemono sauce over the rolls and warm gently without boiling.
