Lemishky
An ancient dish made from buckwheat flour, scalded with boiling water and baked until a crust forms
Ingredienti

- acqua700 ml
- sale1 cucchiaino
- olio o strutto2 cucchiaio
- ciccioli (per servire)80 g
- latte200 ml
- panna150 ml
- panna acida100 g
Istruzioni
Sift the buckwheat flour and mix it with salt.
Bring the water to a boil, pour in the flour in a thin stream, stirring constantly.
Cook the mixture for 5–7 minutes until it becomes thick and pulls away from the sides.
Transfer to a greased baking dish, smooth the surface and drizzle with oil.
Bake at 190 °C for 20–25 minutes until a light crust forms.
Serve with cracklings, mushrooms, milk or sour cream.
