Llapingachos
A popular home dish of Ecuadorian cuisine made with potatoes, cheese, and peanut sauce, well suited for a family menu.
Ingredienti
- patata900 g
- formaggio250 g
- salsa di arachidi200 g
- uovo4 pz
- avocado1 pz
- olio3 cucchiaio
- sale1 a piacere
- pepe nero1 a piacere
- burro30 g
Istruzioni
Boil the potatoes until tender, drain the water, and mash into a purée.
Add sautéed onion, salt, pepper, and a little butter.
Shape the purée into patties, place cheese inside, and pinch them shut.
Refrigerate the patties for 15–20 minutes so they hold their shape better.
Fry in a pan until golden on both sides.
Serve with peanut sauce, egg, salad, or sausage.
