  • prosciutto cotto150 g
  • cetriolo sotto sale3 pz
  • cipolla1 pz
  • concentrato di pomodoro2 cucchiaio

  • panna acida100 g
  • sale1 a piacere
  • pepe nero1 a piacere
  • foglia di alloro2 pz
  • brodo500 ml
  • cetrioli in salamoia40 g

Istruzioni

Prepare a meat broth. Fry the onion, then add tomato paste — this is the base.

Cut the sausage, ham and meat into strips; add to the base.

Finely chop the pickled cucumbers and add them along with the brine (3–4 tbsp.).

Pour in the broth; bring to a boil. Add the olives.

Cook for 15 min. Season with salt, pepper and add bay leaf.

Serve with a slice of lemon, sour cream and fresh herbs.
