Finely chop the pork and bacon, season with salt, pepper and sage.

For the pastry, bring the water and lard to a boil, pour into the flour and quickly knead together.

Press a portion of the warm dough into a tin, forming tall sides.

Fill with the meat and cover with a pastry lid.

Bake at 180 °C for 60–75 min.

Once cooled, pour jellied stock through the hole and refrigerate.
