
Ratatouille
A French vegetable stew with eggplant, zucchini, pepper, and tomatoes.

- cipolla1 pz
- aglio3 spicchi
- olio d'oliva4 cucchiaio
- timo1 cucchiaino
- basilico fresco15 g

Istruzioni
Cut the eggplant, zucchini, and pepper into medium-sized cubes; finely chop the tomatoes.
In a deep skillet, sauté the onion in olive oil for 3–4 minutes until soft.
Add the garlic and pepper, and cook for another 3 minutes.
Add the eggplant and zucchini, season with salt, and simmer for 8–10 minutes, stirring occasionally.
Add the tomatoes, thyme, and pepper; cover and simmer for 20–25 minutes until the vegetables are tender.
At the end, add the basil, adjust the salt, and serve warm as a main dish or side.
