Boil or roast the beetroot, potato and carrot, then cool and peel.

Cut the herring, apple, pickles and vegetables into small cubes.

Chop the onion very finely, and blanch or pickle it if desired.

Mix the ingredients in a large bowl.

Dress with sour cream and mustard or mayonnaise, and season with salt and pepper.
