Rub the beef with salt and pepper, roast to the desired degree of doneness.

Allow the meat to rest for a minimum of 20 minutes.

For the puddings, whisk flour, eggs, milk and salt into a smooth batter.

Heat the moulds with fat in a very hot oven.

Pour the batter into the hot fat and bake for 20–25 minutes without opening the oven.

Serve the roast beef with puddings, potatoes and gravy.
