Boil the potatoes in their skins until half-cooked, or use leftover boiled potatoes from the day before.

Grate the cooled potatoes on a coarse grater, season with salt and pepper.

Melt butter in a frying pan and spread the potatoes in an even layer.

Fry for 6–8 minutes until golden and crispy, then flip and brown the other side.

Fry an egg separately.
