Peel the potatoes and boil them in salted water until soft.

Finely chop the kale, removing the tough stems.

Add the kale to the potatoes 5–7 minutes before the end of cooking, or blanch it separately.

Drain the water, then add butter and warm milk.

Mash the potatoes together with the kale into a rough purée.

Serve with smoked sausage, bacon, or gravy.
