Slice the mushrooms, and cut the potatoes, onion and carrots into cubes.

In a pot, sauté the onion and carrots for 5 minutes.

Add the mushrooms and cook until they release their juices and lightly brown.

Add the potatoes and broth or water, and cook for 20 minutes.

Stir in the sour cream and heat through without letting it come to a strong boil.

Sprinkle with parsley and serve hot.
