Aloo Tama
A home-style soup with a regional aromatic base.
Ingredients
- Potatoes500 g
- Bamboo shoots250 g
- Black-eyed peas150 g
- Tomatoes300 g
- Turmeric0.5 tsp
- Salt1 tsp
- Black pepper0.5 tsp
- Vegetable oil2 tbsp
Instructions
Cut Potatoes, Bamboo shoots, Black-eyed peas, Tomatoes; separately prepare the aromatic base with spices, garlic, or ginger.
In a pot, cook the base in oil or fat if that fits the recipe.
Add the main ingredients and cover with water, broth, or the coconut base from the recipe.
Simmer until the protein, grains, or vegetables are tender.
At the end add herbs, noodles, sour seasoning, or dairy if included.
Adjust the salt and serve hot without adding ingredients outside the recipe.
