Ingredients
- Chicken thighs700 g
- Soy sauce4 tbsp
- Ginger20 g
- Garlic cloves3 cloves
- Starch120 g
- Oil600 ml
- Lemon1 pcs
- Fresh ginger1 tsp
- Mirin2 tbsp
Instructions

Cut chicken thighs into bite-size pieces.

Marinate the chicken in soy sauce, sake or mirin, ginger, and garlic for 30 minutes.

Drain excess marinade and coat the pieces in potato starch.

Fry until lightly golden, remove, and rest for a few minutes.

Return the chicken to hotter oil for a short second fry until crisp.

Serve with lemon, mayonnaise, or rice.
