Ingredients

  • Zucchini2 pcs
  • Eggplant1 pcs
  • Bell peppers2 pcs
  • Tomatoes500 g
  • Onion1 pcs
  • Eggs4 pcs
  • Olive oil4 tbsp
  • Salt1 to taste

Instructions

For Pisto Manchego, cut eggplant, bell peppers, tomatoes, onion and eggs into serving pieces.

Brown eggs lightly.

Add onion and cook for 3-5 minutes.

Pour in olive oil and add zucchini.

Simmer gently until tender and the sauce is thick.

Adjust salt and pepper and serve hot.
