- Tomatoes500 g
- Onion1 pcs
- Eggs4 pcs
- Olive oil4 tbsp
- Salt1 to taste
Instructions

For Pisto Manchego, cut eggplant, bell peppers, tomatoes, onion and eggs into serving pieces.

Brown eggs lightly.

Add onion and cook for 3-5 minutes.
