Chakapuli
A traditional home-style dish with a rich sauce and characteristic spices.
Ingredients
- Lamb or veal700 g
- Fresh tarragon50 g
- Spring onion80 g
- Sour plums or tkemali150 g
- Dry white wine150 ml
- Fresh cilantro20 g
- Salt1 tsp
- Black pepper0.5 tsp
- Vegetable oil2 tbsp
Instructions
Prepare Баранина або телятина, Тархун свіжий, Зелена цибуля, Алича або ткемалі: cut the main ingredients, and finely chop the onion and garlic.
Heat oil in a heavy pot; cook the onion until soft, then add garlic and the spices listed in the recipe.
Add Баранина або телятина, Тархун свіжий, Зелена цибуля, Алича або ткемалі and cook for a few minutes so the ingredients absorb the aromatic base.
Pour in the liquid or tomato base if included, season with salt, and stir well.
Simmer gently until the main ingredients are tender and the sauce has thickened.
Let the dish rest for 5 minutes, then serve with the traditional side or bread.
