Charquican
A popular chilean home-style dish with beef or ground meat, potatoes, pumpkin, well suited for a family weekly menu.
Ingredients
- Beef or ground meat500 g
- Potatoes500 g
- Pumpkin400 g
- Corn150 g
- Green peas150 g
- Eggs4 pcs
- Salt1 to taste
- Black pepper1 to taste
- Paprika1 tsp
- Ground cumin1 tsp
- Garlic2 cloves
- Broth500 ml
Instructions
Brown beef or mince with onion and garlic.
Add diced potatoes, pumpkin, and carrot.
Pour in a little broth or water and season with paprika, cumin, salt, and pepper.
Simmer until the vegetables are tender, partly mashing them with a spoon.
Add corn and peas and warm for a few more minutes.
Serve with an egg on top and herbs.
