Pho Ga

Vietnamese chicken noodle soup with aromatic broth and fresh herbs.

Ingredients

  • Chicken1000 g
  • Rice noodles300 g
  • Onion1 pcs
  • Ginger40 g
  • Star anise2 pcs
  • Cinnamon stick1 паличка
  • Fish sauce3 tbsp
  • Spring onion30 g
  • Cilantro30 g
  • Limes2 pcs
  • Broth500 ml
  • Water500 ml
  • Fresh ginger1 tsp

Instructions

Char the onion and ginger in a dry pan or under a grill until lightly blackened.

Cover the chicken with 2.5 liters of water and add onion, ginger, star anise, and cinnamon.

Simmer gently for 50–60 minutes, skimming foam.

Remove the chicken, pull the meat from the bones, strain the broth, and season with fish sauce.

Soak or cook the rice noodles according to the package directions.

Place noodles, chicken, and herbs in bowls, pour over hot broth, and serve with lime.
