Gigantes Plaki

Large white beans baked in tomato sauce with herbs.

Ingredients

  • White beans300 g
  • Canned tomatoes400 g
  • Onion1 pcs
  • Garlic3 cloves
  • Carrot1 pcs
  • Olive oil2 tbsp
  • Parsley20 g
  • Oregano1 tsp
  • Salt1 to taste
  • Black pepper1 to taste
  • Dried oregano1 tsp

Instructions

Rinse white beans, canned tomatoes, onion and garlic; soak dry legumes and cook until tender.

Chop onion, garlic and carrot and saute until soft.

Add white beans, canned tomatoes, onion, garlic and carrot and pour in olive oil.

Simmer gently until thick.

At the end, stir in oregano and olive oil, then season with salt and pepper.

Serve hot.
