Portuguese green soup with potatoes, kale, and chorizo

Ingredients

  • Potatoes600 g
  • Kale or savoy cabbage300 g
  • Chorizo or smoked sausage150 g
  • Onion1 pcs
  • Garlic2 cloves
  • Olive oil2 tbsp
  • Broth500 ml
  • Water500 ml

Instructions

Peel and dice the potatoes; chop the onion and garlic.

Heat olive oil in a pot and saute the onion and garlic for 3 minutes.

Add the potatoes, cover with water or broth, and cook for 20 minutes until tender.

Blend the soup into a smooth base.

Slice the cabbage very thinly and cut the sausage into rounds.

Add the cabbage and sausage to the soup, cook for 5-7 minutes, and serve hot.
