Khinkali
Georgian soup dumplings filled with juicy seasoned meat.
Ingredients
- Wheat flour500 g
- Beef and pork mince500 g
- Onion2 pcs
- Fresh cilantro30 g
- Ground cumin0.5 tsp
- Black pepper1 tsp
- Salt1 to taste
- Ice water220 ml
Instructions
Make the dough from flour, salt, and ice water; knead into a firm ball and rest for 30 minutes.
Make the filling from beef-and-pork mince, finely chopped onion, cilantro, cumin, pepper, salt, and 50 ml water.
Roll out circles 10-12 cm wide and place 1.5 tbsp of filling in the center.
Pleat the dough like an accordion, making at least 12 folds, and twist the top into a knob.
Boil in salted water for 12-15 minutes after they float.
Serve hot: hold by the top knot, bite the side, and drink the broth inside.
