Chicken Adobo

Filipino chicken braised in soy sauce, vinegar, garlic, and bay leaves.

Ingredients

  • Chicken thighs800 g
  • Soy sauce100 ml
  • Vinegar80 ml
  • Garlic cloves6 cloves
  • Bay leaves3 pcs
  • Peppercorns1 tsp
  • Sugar1 tsp
  • Rice for serving300 g

Instructions

Mix the chicken with soy sauce, minced garlic, and bay leaves and let it stand for 20 minutes.

Transfer the chicken and marinade to a pot and add vinegar, peppercorns, and sugar.

Bring to a boil without stirring for the first 3–4 minutes.

Reduce the heat, cover, and simmer for 25–30 minutes.

If desired, remove the chicken and brown it quickly in a pan while reducing the sauce.

Return the chicken to the sauce and serve with rice.
