Soba Noodle Salad

Ingredients

  • Soba noodles300 g
  • Cucumber1 pcs
  • Carrot1 pcs
  • Soy sauce3 tbsp
  • Sesame oil1 tbsp
  • Sesame seeds1 tbsp
  • Black pepper1 to taste
  • Sugar1 tsp
  • Fresh ginger1 tsp
  • Rice vinegar2 tbsp

Instructions

Boil the soba noodles according to the package until springy.

Rinse the noodles under cold water and drain well.

Cut cucumber, carrot, pepper, or spring onion into thin strips.

Mix soy sauce, rice vinegar, sesame oil, a little honey or sugar, and ginger.

Toss the soba with the vegetables and dressing.

Serve chilled, sprinkled with sesame seeds and herbs.
