- Frisee or salad mix150 g
- Bacon120 g
- Bread100 g
- Eggs2 pcs
- Dijon mustard1 tsp
- Wine vinegar2 tbsp
- Salt1 to taste
- Black pepper1 to taste
- Dry wine150 ml
Instructions

Wash and dry the salad leaves well.

Fry bacon or lardons until crisp, keeping some fat for the dressing.

Cut bread into cubes and toast into croutons.

Poach the eggs in gently simmering water with vinegar for 3 minutes.

Make the dressing from warm bacon fat, wine vinegar, mustard, salt, and pepper.
