Satsivi
Chicken in a rich walnut sauce with Georgian spices.
Ingredients
- Whole chicken or thighs1200 g
- Walnuts300 g
- Onion2 pcs
- Garlic4 cloves
- Khmeli-suneli2 tsp
- Butter40 g
- 9% vinegar1 tbsp
- Salt1 to taste
- Cilantro15 g
- Turmeric0.5 tsp
- Cream150 ml
- Sour cream100 g
Instructions
Boil the chicken in salted broth with onion and spices for 40-45 minutes, then cool it.
Lightly toast the walnuts and grind them in a blender.
Saute the onion in butter until translucent.
Mix the walnuts with onion, garlic, khmeli-suneli, turmeric, coriander, and vinegar.
Thin the sauce with hot chicken broth until it has the consistency of thin sour cream, then boil for 5 minutes.
Pour the hot sauce over the chicken pieces and let it cool. Serve chilled.
