- Beef roast1200 g
- Red wine or vinegar400 ml
- Broth500 ml
- Onions2 pcs
- Carrots2 pcs
- Bay leaves3 pcs
- Juniper berries6 pcs
- Gingerbread or flour for sauce40 g
- Salt1 to taste
- Sugar1 tsp
- Dry wine150 ml
- Water500 ml
- Fresh ginger1 tsp

Marinate the beef for 2–3 days in wine or vinegar, water, onion, carrot, and spices.

Pat the meat dry, strain the marinade, and reserve it.

Brown the beef deeply on all sides.

Add the marinated vegetables, some marinade, and broth; braise for 2.5–3 hours.

Strain the sauce, thicken with gingerbread or flour, and balance with sugar and salt.

Slice the meat and serve with red cabbage and dumplings.
