Coronation Chicken
Tender cold chicken in a mild curry-cream sauce with mango chutney and raisins — a British classic for sandwiches and lettuce cups.
Ingredients
- boiled chicken500 g
- mayonnaise120 g
- natural yogurt80 g
- curry powder2 tsp
- ground cinnamon0.5 tsp
- mango chutney2 tbsp
- raisins40 g
- almond30 g
- salt1 to taste
- black pepper1 to taste
Instructions
Cool the boiled chicken, remove the skin, and shred it by hand or cut into small pieces.
In a bowl, mix the mayonnaise, natural yoghurt, mango chutney, curry powder, and ground cinnamon.
Add the raisins, salt, and black pepper; stir and taste, so the sauce is mildly spiced, slightly sweet, and rich enough.
Fold the chicken into the sauce until evenly coated, then gently stir in half of the almonds.
Cover the bowl and chill the coronation chicken for at least 30 minutes to let the flavours meld.
Serve cold, sprinkled with the remaining almonds, in sandwiches, lettuce cups, or with boiled rice.
