Baked Potatoes with Beans and Cheese

Crispy jacket potatoes with fluffy centres, hot beans in tomato sauce and melted cheddar — a simple British classic for a cosy dinner.

Ingredients

  • large baking potato4 pcs
  • olive oil1 tbsp
  • salt1 to taste
  • beans in tomato sauce840 g
  • butter50 g
  • cheddar80 g
  • green onion15 g
  • ground black pepper1 to taste

Instructions

Preheat the oven to 200°C (180°C fan). Wash the potatoes well, pat dry, and prick each one about six times all over with a fork.

Rub the potatoes with olive oil and salt, place on a baking tray and bake for 60–75 minutes, until the skins are crispy and the centres are soft.

While the potatoes are baking, heat the beans in tomato sauce in a saucepan over low heat, without letting them boil hard.

Remove the potatoes and immediately cut a deep cross into the top of each one. Gently fluff up the soft centre with a fork.

Add a knob of butter to each potato, spoon the hot beans over the top, and sprinkle with grated cheddar.

Serve immediately, topped with spring onions and black pepper to taste.
