Satarash

A summer Croatian vegetable stew of sweet peppers, ripe tomatoes and onion, slow-simmered into a thick, juicy sauce.

Ingredients

  • bell pepper500 g
  • ripe tomatoes700 g
  • onion1 pcs
  • garlic3 cloves
  • olive oil3 tbsp
  • salt1 to taste
  • ground black pepper1 to taste

Instructions

Score the tomatoes crosswise, pour boiling water over them for 1 minute, then plunge into cold water, peel and dice.

Deseed the sweet peppers and cut into strips, slice the onion into thin half-rings, and mince the garlic.

Heat the olive oil in a wide, deep skillet over medium heat. Add the onion and cook for 5–7 minutes, stirring often, until soft and translucent.

Add the sweet peppers, stir, and cook covered for 10 minutes, until they begin to soften but aren't fully cooked through.

Add the tomatoes and garlic, season with salt and pepper. Stir and simmer uncovered over low heat for 25–30 minutes, stirring occasionally, until the vegetables are tender and the excess liquid has evaporated.

Remove the satarash from the heat, let it rest for 5 minutes, and serve hot or warm as a standalone vegetable dish or a side.
